Many are oven-safe pans with a lid that has a shelf for vegetables to sit on during the roasting process. This allows the vegetable juices to collect below, which can then be put back on the vegetables to boost flavor and moisture. Some vegetable roasters are simply flat pans and some lack lids, although if you roast vegetables without lids, especially if they require long cooking times, you can dry out the vegetables.
Do you really need a vegetable roaster if you already have several roasting pansIt’s debatable. If you have a good roasting pan with a lid and a rack, you can roast vegetables to your liking without buying a vegetable roaster. However, if you have vegetarians in the house, they may object to using meat-roasting pans to cook vegetables in the oven. So purchasing a separate rotisserie for your vegetables may be in order. On the other hand, if you plan on preparing a huge batch of roasted vegetables, you might want to consider purchasing a large turkey roasting pan with a rack so you can cook several vegetables at once.
There are a number of recipes that can inspire the potential veggie roaster. Some suggest marinating the vegetables first so that the roasting causes the flavors to intensify and permeate into each slice of vegetable. You can also cook the vegetables whole, not marinated, or use a vegetable roaster for filled vegetable dishes. The main advantage of having a grill is that the vegetables do not stick to the bottom and the heat can circulate around each piece of vegetable, making sure that every delicious carrot, onion, pepper, eggplant slice or other is cooked evenly.
