A pineapple casserole is a sweet side dish, baked with pineapple, cheese and crackers or bread. Made in a casserole dish, this side is often paired with ham or can even be used as a dessert. While there are many minor differences in pineapple casserole’s ingredients and methods of preparation, the dish is similar between versions.
Chunky or mashed canned pineapple is often used for pineapple casserole, and some versions use both. Canned fruit is usually drained, but some of the liquid is often retained. Lemon juice can also be used in place of pineapple juice or syrup. Sugar, flour, butter, and grated cheddar cheese are also common ingredients in this dish, and cinnamon and nutmeg may also be added occasionally. Either crushed crackers or diced white bread is the last item.
To prepare pineapple casserole, the casserole is usually greased with butter first. Many versions then place the pineapple directly into the dish, but some mix all the ingredients first and then place the finished mixture into the dish. Still others heat the pineapples and stir in the sugar – best letting the sugar dissolve – before placing the fruit in the saucepan.
If the sugar does not dissolve in the fruit, it is mixed with flour. The cheese is often combined with the sugar-flour mixture, but can be left alone. The sugar mixture is then sprinkled over the pineapples. The melted butter can be mixed with the crushed crackers, then the butter-cracker mixture creates the final layer. Crackers can also be sprinkled on top of the dish, then melted butter is poured over the crackers.
Alternatively, the ingredients can be mixed thoroughly before placing in the saucepan. In this case, the butter and sugar are often creamed together. Then, the eggs are beaten into the mixture, normally one at a time. Next, pineapple and juice are mixed. If crushed crackers are used, they are also mixed, but bread cubes are folded into the mixture.
Pineapple casserole can also be made in several layers. The pineapple-sugar mixture makes up the first layer, then the cracker crumbs, butter, and cheese make up the next layers. The layers are then repeated three or four times before the dish is ready for the oven. Normally, this casserole cooks for about half an hour and is bubbly and golden brown when fully cooked through.
