A variety of oils can be used to make infused oil. It is better to understand the storage capacities of the oil. For example, peanut oil and olive oil need to be refrigerated before and after they become infused oil or they will go rancid.

In general, choose an oil that doesn’t have a strong flavor. Light olive oil, peanut oil, and safflower oil are all better choices than walnut oil, for example. One can also purchase infused oil in multiple varieties at gourmet grocery stores. With these, also observe the storage instructions.
