At this point, nuts or dried fruit can be stirred into the clotted cream fudge.

When the fudge is at a temperature of 110 degrees Fahrenheit (43 degrees Celsius), it needs to be stirred continuously until it begins to thicken. Stirring the fudge helps form tiny sugar crystals throughout the mixture so the texture of the candy is soft and chewy and yet firm enough to hold together on its own. After the clotted cream has melted, it can be poured onto a tray until it has completely cooled.

This type of candy is rich and usually eaten in small pieces. The large amount of sugar in clotted cream fudge makes it a very sweet candy while the clotted cream fudge has a smooth, creamy texture that melts in a person’s mouth.
