Unlike the other two defrosting methods, ground beef thawed in the refrigerator can be re-frozen before cooking if needed. Meat can usually be stored safely in the refrigerator for an extra day or two after thawing.

It is not safe to defrost ground beef at room temperature by leaving it sitting on a table or countertop. This method allows the beef to get too hot, which often leads to rampant bacterial growth. Unsafe defrosting can lead to serious foodborne illness and should therefore be avoided.
