The parsley in the cucumber dip can be substituted for other herbs, mint and coriander being popular alternatives. Additional spices such as cumin, coriander or cayenne pepper can also be added to the dipping sauce, and lemon or lime juice can also be included to give the sauce a tarter flavor. As an alternative to citrus fruits, sour cucumbers, such as lemon cucumbers, can be used to sour the sauce.

Although cucumber dipping sauce is usually consumed for its cooling properties, it can include hot peppers. The coolness of the cucumber balances the heat of the jalapeño or other hot peppers well, allowing more of the pepper flavor to pass through without as much of the spicy kick that comes with it. In most cases, this type of dipping sauce also contains yogurt or sour cream.

Vinegar-based cucumber dipping sauce is also made around the world. This type of dipping sauce lightly pickles the cucumbers, giving the sauce a very tart flavor. To make this type of sauce, vinegar, sugar, salt, and water are carefully combined, usually by boiling, and then mixed with finely chopped or shredded cucumber. Chillies are also commonly used in these sauces, giving them both a spicy and sour kick when used as a dip for breads, wraps, or fresh vegetables. A vinegar-based cucumber dip can be eaten immediately, but is usually allowed to sit for an hour or more so the cucumbers can absorb the vinegar and spices.
