If the cast iron is very dirty with stuck food, scouring could damage the plate. Some recommend boiling water or using a sausage to break up burnt foods. So, a cast iron griddle should be dried immediately. Moisture left on cast iron will almost certainly turn to rust.

Before putting the griddle away, some cooks rub more oil on the surface and leave it in a hot oven or stove for a few minutes to release all the water. A paper towel left on the plate could also absorb liquid during storage. This durable utensil should serve you for many years if it is properly prepared, used and maintained.
