French and string beans are popular varieties of green beans. They are easy to grow in a garden and should be harvested when young and tender. When selecting them at the store, look for firm and evenly colored beans. Cook them lightly to maintain their crunchiness.

French beans are elongated green beans that are widely grown in France. Some consumers call them “green beans” or “French beans” to differentiate them from other varieties of green beans. When well grown, they can be a superior mung bean, ideal for a wide range of recipes and side dishes. Some markets sell green beans and they can even be grown at home if you have the space for a garden.

Superficially, string beans can look a lot like regular green beans. However, they are a little thinner and longer than regular green beans and are stringless too. Like other green beans, string beans are simply the unripe fruit of the bean plant. They are green because they have not fully ripened and will later grow into kidney beans, small white beans that are used in soups, chili and other bean dishes. The best green beans will be harvested when they are still very young and tender, before the pod has started to become woody and inedible, and all but the stem of the bean is edible.

When selecting green beans at the store, look for samples that are evenly colored, with no signs of yellowing or mold. They should also feel firm and smooth to the touch, with no slime or soft spots. Store the beans in a paper bag for up to four days in the refrigerator and wash them before using. When using the beans, cut off the tips and remember to cook them lightly so they stay crunchy.

Beans are easy enough to grow in a home garden, provided you have room for a bean trellis. Many garden supply stores sell packets of beans for sale, and you can use the plants to make bean verbs and dried beans. Plant the beans in a sunny space with a trellis, wall or stake to grow on. Water the beans regularly and keep the growth above the ground so the plants don’t mold or rot. When grain verbs emerge, collect and use them as quickly as possible for a fresh taste.
