They are a cheap and versatile way to add flavor to many dishes.

One of over twelve hundred types of alliums, or onions, in the world, green onions are a simple and versatile way to add a subtle onion flavor to many dishes. Sometimes referred to as shallots or spring onions, this vegetable is simply an onion that is harvested before it reaches maturity. At this stage, the green tops of the onion have reached the dark hue which indicates a desirable level of flavor while maintaining a tender texture.

One of the great things about green onions is that they’re often available year-round. With a different taste and texture from a mature onion, spring onion can be served in a number of ways. You can chop greens for salads and as a side dish, grill the whole onion as a side dish, or use the chopped pieces as part of a casserole.

Choosing quality green onions is not a difficult task. When purchasing this type of shallot, make sure the small root on the onion plant is white and relatively firm. Green tops should be crisp and show little to no wilting. Keep in mind that these greens are best purchased shortly before use, as the onions begin to wilt within a day or two. Placing the onions in a tightly sealed plastic bag can slow down this process. Keep the bag in the fruit and vegetable compartment of the refrigerator. In general, this will allow green onions to remain usable for up to five days.

Green onions can be a wonderful way to dress up prepackaged foods. Adding chopped green onions to condensed chicken noodle soup will add flavor and visual interest. They’re also a great way to season a baked potato. Even rice or mashed potatoes can benefit from adding green onions to the finished dish. Best of all, these veggies tend to be very cheap and widely available in most supermarkets.
