Salchipapas is a popular fast food in Peruvian and Bolivian cuisine, made of fried potatoes and sausages. It is often sold by street vendors and served with mayonnaise or ketchup. However, it is not considered healthy due to the use of processed meats and should be eaten in moderation.

Salchipapas is the term given to a combination of fried sausage and potato dishes that are prepared as fast food in Peruvian and Bolivian cuisine. These dishes are available in restaurants and snack bars, and are also commonly sold by fast food vendors operating street carts. The popularity of this fast food is that it is tasty, filling and not particularly expensive. It is best, however, to eat salchipapas in moderation and certainly not in place of regular meals. The basic ingredients of salchipapas are, of course, potatoes and sausage or hot dog links. To prepare the fries for the salchipapas, the potatoes are peeled, cut into thin, long slices and placed in salted water for about an hour. They are then removed, drained and fried in rapeseed or sunflower oil for five to ten minutes. They are set aside on paper towels to drain excess oil and after they have cooled, the potatoes are re-fried until golden brown and crispy. Next the sausages are fried, with cross cuts at the end of each one.

Typically, salchipapas are eaten with mayonnaise, tomato sauce or ketchup or a combination of mayonnaise and tomato sauce which is called salsa rosada or salsa golf. The fried potatoes and sausages are mixed together and drizzled with the sauce, which can be served hot or chilled before use. If necessary, raw onion rings, mint and parsley can be added to the mixture. Salchipapas can be served in a plate or glass and are generally eaten with a toothpick. While there are only so many ways potatoes and sausages can be fried, there are different recipes for the sauce and this determines the overall flavor of the salchipapas. Many grocery stores that sell salchipapas may have a dedicated following due to the special sauces they serve.
