In this case, it’s a good idea to grease the pan a little first to avoid a huge cleanup mess later. Of course, you don’t need a cookie sheet. Drop cookies can just as easily be made on a cookie sheet. They may not offer the aesthetic pleasure of perfectly round cookies, but they taste just as good.
