An Aebleskiver skillet is a pan used to make Danish puffed pancakes, often served as a dessert with whipped cream and fruit preserves. The skillet has 6-10 semicircle inserts and is typically made of cast iron. It cannot be used on an electric stove. Rectangular oven pans are also available. Prices range from $30-70 USD.

An Aebleskiver skillet is a skillet designed to cook, not surprisingly, Aebleskiver. Aebleskivers are delicious Danish pancakes. They are a type of puffed pancake that takes on a spherical shape due to the shape of the pan, instead of being the flat pancakes many are more familiar with. They’re served more as a dessert, offered with whipped cream and fruit preserves, and are often a favorite around the holidays as a special treat. You can also find Aebleskivers at county fairs in the United States, where they typically aren’t pan-cooked Aebleskiver but are deep-fried instead. In the United States, they are often called cream puff Danishes.

The Aebleskiver pan is normally a circular pan with 6-10 semicircle inserts. These are similar to, but more rounded than muffin cup inserts. The batter is poured into the pan and puffed up the pancake. When fully cooked on one side, the round pancake is flipped to brown the other side. Adding a generous supply of butter to each cup of the Aebleskiver pan while it’s preheating helps brown the pancakes. The results are round, puffy, rich pancakes, usually about an inch or two (2.54-5.08 cm) in diameter.

The most commonly available Aebleskiver skillet is made from cast iron. You can find a few varieties of nonstick aluminum, but cast iron tends to be preferred by Aebleskiver experts. Note that you cannot use the Aebleskiver pan on an electric stove as the pan can get too hot and the pancakes don’t heat up or rise as evenly as they should. It is much more preferable to use a gas hob.

If you don’t have a gas stovetop, there is an alternative to the Aebleskiver stovetop skillet. You can find flat rectangular Aebleskiver pans that are intended for use in the oven. These often feature fancy designs and need to be buttered very well before use so your pancakes don’t stick to the incisions when you turn them. Some cooks do not turn the pancakes when cooked in an Aebleskiver pan as they will brown naturally. They are then taken out of the pan and served for the design. It’s harder to find this second type of Aebleskiver pan because most cooks prefer making ball fritters on the stovetop.

The Aebleskiver skillet varies in price. A heavy cast iron skillet with 6-10 cups costs about 30-70 US dollars (USD). You may be able to find aluminum nonstick types for a little less, possibly under $30. Look out for garage sales too, especially if you live in a country where Aebleskivers are not prepared frequently. Many people buy a pan and then only use it a few times, and may be happy to sell it at a yard or garage sale.
