Egg sandwiches can be made with various types of bread and eggs, including fried, scrambled, poached, or hard-boiled. They can be simple or complex, with cheese or meats added. Egg salad sandwiches and Eggs Benedict are also popular variations.

An egg sandwich is a general term for any sandwich whose primary ingredient is egg. They can be made with fried, scrambled, poached or hard-boiled eggs or egg salad. Eggs might be placed on white, wheat, rye, or sourdough bread; English Muffins; bagel; or croissants. A sandwich can be very simple, including little other than eggs and bread, or complex, such as Eggs Benedict, a type of open-faced egg sandwich.

Plain egg sandwiches are often thought of as comfort foods. Frequently made at home, bread can be buttered or covered with mayonnaise, ketchup, or other condiments. If the eggs are scrambled, they are usually cracked into a bowl and mixed first. Sometimes milk can be added to the egg mixture to increase fluffiness. Salt and pepper are often added directly to the egg mixture as well. The egg mixture is then poured into a nonstick or buttered skillet, cooked until it no longer flows, and placed between the slices of bread.

Fried eggs are made by cracking eggs directly into a pan and turning them once during cooking. Both the whites and the yolk are firm in a well-cooked fried egg. Small single egg pans can be found that allow fried eggs to form a circular shape roughly the size of an English muffin. These eggs are commonly found in breakfast sandwiches at fast food restaurants, such as McDonald’s famous Egg McMuffin.

Both scrambled and fried egg sandwiches can also have cheese – often American – or meats sandwiched with them. Bacon and sausage patties are popular meats included in these sandwiches. While fried egg sandwiches can be used with any type of bread, English muffins are most commonly paired with fried eggs.

Hard-boiled eggs are made by boiling the eggs for several minutes inside the shell. Once peeled, these eggs can be cut up and placed on bread or mashed with mayonnaise or Greek yogurt, lemon juice, salt and pepper, and a variety of spices and dressings to make egg salad. Egg salad sandwiches are often served with slices of tomato or lettuce.

Many restaurants offer more complicated egg sandwiches, such as Eggs Benedict. Eggs Benedict is an open-faced egg sandwich, which means that while it sits on a piece of bread — again an English muffin in this case — it’s missing the top piece. Atop the English muffin is usually a piece of ham, although bacon can also be used. A poached egg, or one that has been cracked into boiling water to cook, sits on top of the meat. The sandwich is then topped with hollandaise sauce, a gourmet sauce made from egg yolk, butter, and seasoning.
