Beer soup is a homemade soup made with beer, cheese, vegetables, and chicken broth. It can include Worcestershire sauce, mustard seeds, and garlic as condiments. Milk and beer are added to the broth and vegetables, and cheese is the last ingredient. It is often garnished with grated cheese, crumbled bacon, or paprika and served with bread.

Beer soup is a type of soup made with beer and, usually, cheese. Normally using both stock and beer as the liquid base, beer soup often has several types of vegetables and often includes onions. Cheddar, or another hard cheese, is also typically included. The one mandatory ingredient, however, is beer. Beer soup is often homemade.

Carrots, celery and onions are usually the vegetables of choice for this dish. Potatoes are also a good addition. Any vegetable can be included, however, even those less commonly found in your average soup or stew, such as cauliflower or broccoli.

Worcestershire sauce, ground mustard seeds, and garlic are often used as condiments in ale soup. Hot sauce or soy sauce can replace or complement the Worcestershire sauce, or the sauce ingredient can be omitted altogether. Bay leaves are sometimes added when cooking the soup, but are discarded before eating. Sugar is included in some recipes and salt and pepper are almost always added to taste.

Beer soup usually includes milk, although recipes vary on whether it should be whole or low-fat, and some even suggest half-and-half. In addition to beer, chicken broth is generally the main liquid element of the dish. The beer is usually a lager because darker beers can add a bitter taste to the soup. Some recipes, however, suggest using stout.

To make beer soup, the vegetables and sometimes the toppings are cooked first, in oil or butter. A small amount of flour is usually added to thicken the mixture just before the stock is added. Milk and beer are included with the broth or after the broth begins to thicken. If the toppings haven’t already been added, I’m at that. Some recipes, however, suggest boiling the broth before adding the vegetables and may puree the mixture after the vegetables have cooked through.

Cheese is generally the last ingredient added to beer soup. Only when the soup is almost ready is the cheese stirred. Once it melts, the soup is ready to serve.

Beer soup has several garnish options. Grated cheese, crumbled bacon, or paprika are all common toppings for this soup. Baguette bread, or a similar type of bread, often accompanies the dish. The Danish version of beer soup puts pieces of rye bread in the bottom of the bowl and pours the soup over them. Also use whipping cream as a side dish.
