The main shortcoming of candy glass is that it tends to warp in hot or humid environments and, as a result, must be used quickly.

To make a glass of candy, heat three-and-a-half cups of sugar, two cups of water, one cup of corn syrup, and a quarter teaspoon of cream of tartar in a heavy saucepan until bubbly. When it reaches boiling point, most of the water disappears, creating a very thick syrup. Continue boiling the syrup until it has reached 300 degrees Fahrenheit (148 degrees Celsius) and then pour it into a mold. Keep in mind that the candy glass is fragile, so it’s not a good idea to make a single sheet and try to cut it.

Once the glass of candy has solidified and cooled, it should be used up as quickly as possible. It will attract ants and other insects and be prone to melt even in mild conditions. If you need a glass facsimile for something like a holiday display, you may want to consider more durable alternatives to candy glass, unless you know the display will stay cold.
