Feta cheese can be added to many soup recipes for a salty, creamy kick. Traditional Greek soups like chicken feta soup and spinach and feta soup are popular, while others like broccoli and tomato basil feta soup can be made with feta as a substitute for other cheeses. Cold feta gazpacho soups are also popular.

Feta, the national cheese of Greece, makes its way into a variety of popular dishes, perhaps the least common of which are soups. Any soup recipe that calls for cheese, however, can include feta for a salty, slightly tart kick of creaminess. Feta soup is made in a variety of ways, depending on the ingredients and culture, but the feta cheese isn’t usually added until after the soup has taken shape.

Some traditional soups of Greece include feta cheese as a fairly important ingredient. A chicken feta soup is made from chicken broth, with tomatoes, spinach, and then feta cheese added as the chicken is nearly boiled. The soup is finished with oregano, lemon juice and noodles, which is simmered until al dente, then served. Feta adds a salty, sour twist to this dish.

Another Greek classic begins and ends even more simply. After a mixture of minced garlic, celery and onion has been caramelized in butter, vegetable or chicken stock, white wine, potato chunks and a little nutmeg are added, then brought to a boil. Once the potatoes are almost tender, the chopped spinach comes in with a little cream. Many chefs puree this mixture once cooked to even out all ingredient sizes, then add some Worcestershire sauce, salt, pepper, pine nuts and feta cheese. The feta will melt into the soup to provide little pockets of added earthiness, but it’s the other dairy that makes this soup creamy.

Feta soup can be made to mirror many popular soup recipes. Some chefs make a broccoli and feta soup, substituting the usual cheddar. Others make Tomato Basil Feta Soup, which is essentially tomato soup with feta added. Roasted Chili and Feta Soup features burnt and smoky peppers which are then minced with onions, garlic and celery and combined with red wine, lemon juice, feta cheese, sour cream, soy and milk for a quick puree in the blender and long heat simmer over medium-low heat.

Most soups that benefit from the addition of cheese can be garnished or even made with the help of feta. As previously illustrated, these can resemble traditional favorites or take on a life of their own. Some other tried-and-true complex combinations are cold feta gespacho soups: one with cucumber, mint, watercress, and feta cheese, and another with watermelon, mint, lemon juice, feta cheese, wine, and ginger.
