This holds the lattice topping together and looks much neater and more elegant than a topping made in a simpler style. The woven cover can also be brushed with egg to develop a glossy appearance in the oven.

For people who don’t like to mess with strips, you can find a trellis, a kitchen gadget that will create lattice pie topping as a single piece by punching holes in a pie crust. This cut lattice can then be carefully lowered onto the filling and crimped onto the bottom crust. It’s also possible to draw a cut lattice freehand, and adventurous cooks can even try making lace and other patterns to dress up their lattice pies.

Because a lattice cake has a partially open topping, bakers should be wary of wet cakes, as highly liquid fillings can bubble up and create a significant mess, as well as look unpalatable. Cornstarch, flour, or some other thickener should be added to the filling so it’s less likely to spoil during the cooking process.
