What’s Mop Sauce?

[ad_1]

Mop sauce is a thin sauce applied to meat while grilling or broiling, made with stock, vinegar, spices, and sometimes gravy. It can be used as a base for a thicker sauce and is often tailored to the type of meat being prepared. Homemade sauce is easy to make and customizable.

While mop sauce is sometimes confused with barbecue sauce, there is one important difference. Mop sauces are thin sauces that are applied to meat as it is grilled on a barbecue or broiled in an oven. While it packs a lot of flavor, it’s thin enough to leave a thin layer on the surface of the meat that it’s able to absorb as the meat continues to cook. It is usually applied with the use of a hand scrub brush. It is not unusual for gravy to be used to keep the meat tender and flavorful during the cooking process, and a thicker gravy added to the meat just before serving.

Sometimes referred to as a basting sauce, a mop sauce often begins with the use of some type of stock, such as beef or chicken. Small amounts of soy or Worcestershire sauce are added to the stock, along with white vinegar and various spices. Most recipes call for the use of garlic powder, salt, pepper, and a small amount of dry mustard.

Often the choice of stock and other ingredients is based on the type of meat being prepared. Barbecue mop sauce is often used for ribs and pork, while brisket sauce will be formulated to complement the preparation of a beef brisket. Chicken Soup Sauce may be just the right option for use when grilling or grilling boneless breasts. However, it’s not unusual for people to make a basic barbecue sauce that can be used for everything from ribs to pork and chicken.

Mop sauce can also serve as the base for a thicker sauce served at the table called sopping sauce. Essentially, enough gravy is made to baste the meat and serve as the base for the thicker gravy. After enough is set aside to prepare the meat, the rest is infused with granulated sugar and a thickener, such as ketchup. This allows the sauce to retain the basic flavor of broom sauce, but is ideal for cutting and dipping a small portion of prepared meat into your meal.

While you can buy commercial brands of mop sauce, the process of making your own sauce from scratch takes very little time. An added bonus is that the flavor of the homemade salsa can be enhanced by using any combination of spices you like. It’s also easier to control the thickness when it’s prepared using ingredients found in most kitchens.
