A green bean stir-fry is a dish made by frying green beans and other ingredients at a high enough heat that the food can be stirred more or less continuously as it cooks. While this type of dish is traditionally prepared in a wok, which is a deep skillet with steep sides specially designed to maintain high temperatures while cooking food, it is also possible to make it in a pan that has been heated to a high temperature. Although the primary ingredients in a mung bean stir-fry are green beans, there are a variety of other vegetables, meats, and seasonings that are commonly used in these dishes.

Of course, green beans are the main ingredient in a mung bean skillet. Many different varieties of green beans can be eaten, although some of the most common are lake blue, mung bean, and Kentucky blue. All of these beans are harvested from the bean plant before they are fully ripe, when the seeds inside the bean shells are still soft and sweet in flavor.

A variety of other ingredients can also be used in a mung bean skillet. French fries are traditionally made and eaten in Asian nations, and many of these dishes use Asian seasonings, such as ginger, soy sauce, black bean paste, and rice wine vinegar. Other vegetables, such as bok choi, bamboo shoots, water chestnuts and broccoli can also be used in a mung bean skillet. Tofu or any type of meat is also common.

To stir-fry a mung bean, the wok or other cooking vessel must be brought to high heat. Once hot, oil is added and left to reach temperature. Then seasonings are added, green beans and other ingredients are tossed into the wok or skillet and left to cook quickly. When this dish is cooked over high heat, the green beans usually finish cooking after just a couple of minutes.

After cooking, a green bean stir-fry is often served over a bed of rice so that the flavor of the sauce seeps into the rice. You can also serve this simple dish, over pasta or wrapped in a tortilla. In any case, the fried green beans should be eaten hot, immediately after cooking.
