Nasi bogana is a popular rice-based dish from southeast Indonesia, wrapped in banana leaves for portability. Traditional preparation involves steaming the dish in banana leaves, but some choose to omit them.

Nasi bogana is a dish originating in southeast Indonesia, known for its banana leaf wrap. One of several rice-based meals that are popular in the region – nasi means “rice” in Indonesian – is especially loved for its portability. For this reason, it also functions as a kind of fast food restaurant. Nasi bogana is also known as nasi begana.

Tegel, which is the largest city in the Tegal regency in the northwestern part of Central Java province, is credited with the origin of nasi bogana. It is most popular among the Javanese and Sundanese who inhabit the island of Java and represent Indonesia’s largest and second largest ethnic group respectively. In addition to Javanese and Sundanese restaurants and street corners, particularly in the capital city of Jakarta, nasi bogana is offered in warungs. These are small family-run restaurants or outdoor cafes found in Indonesia and Malaysia.

To prepare nasi bogana, a banana leaf is spread on a plate and steamed rice is placed on top. The rice is then topped with fried shallots, which are onions characterized by their pear or bulb shapes. Then the whole thing is covered with another banana leaf and more ingredients are added. Meat-based additions include opor ayam or white chicken curry; dendeng, or shredded meat; or fried chicken gizzards and liver covered in chili and gravy.

Nasi bogana can be served with side dishes such as stir-fried green beans, hard-boiled eggs, or a traditional Indonesian soy product called tempeh. After the garnishes are placed on the banana leaf, it is closed, tied with strings and placed in a steamer to preserve its heat.

Some people use slight variations of the contours. For example, eggs don’t have to be served whole; can be cut in two. White chicken curry, which is made by cooking chicken in coconut milk, can be made with boneless meat. This is done to make it easier to wrap the plate.

Although nasi bogana is traditionally made with banana leaves, some people choose to forgo it altogether. It can be served like a regular rice meal, on a plate. The omission of the customary banana leaves can be attributed to the dish being so popular in the region that it is recognizable without them.
