Pie a la mode is a dessert consisting of a slice of pie topped with ice cream, created in the late 1890s in New York. The most common version is apple pie with vanilla ice cream, but other variations include different fruit pies, crumbles, and ice cream flavors. Heating the pie before adding the ice cream is a personal preference. The brownie sundae is a popular spin-off of the classic dessert.

Pie a la mode is simply a slice of pie with a scoop of ice cream on top. He was born in New York in the late 1890s when, according to legend, a gentleman named Professor Charles Watson Townsend was eating a piece of apple pie with vanilla ice cream. A woman at a nearby table asked what her dessert was called, and when he informed her that she didn’t have a name, she called it a pop cake. It’s been a dessert favorite ever since, and in the more than 100 years since it was first created, the trendy cake mode hasn’t changed much.

The most common type of trendy cake is a piece of apple pie topped with vanilla ice cream. While this is the most common way to serve it, there are other variations. Apple pie can easily be substituted for any other fruit pie like peach pie, cherry pie, blueberry pie, or strawberry rhubarb pie. Other changes include replacing the pie with apple crumble or apple brittle. While apple is the most common, any fruit crumble or fresh fruit can be served stylish.

Another adaptation of the classic can be made by substituting the vanilla ice cream for another flavor such as chocolate, peach or strawberry. It doesn’t matter if the ice cream is served on top of the pie or down the side, as long as it’s on the same plate. Other toppings such as topping or whipped cream are often served with the cake, however this is not considered a classic fancy cake. Basically, to be considered a fancy cake, the dessert must consist of a cake or cake-like base and be topped with ice cream.

One way many people and establishments serve the cake a la mode is by heating the cake before adding the ice cream. When ice cream is added to hot cake it begins to melt. Whether or not the cake is heated is a personal preference.

In more recent years, other variations of the dessert have been created. One of the standout spins of the classic is the brownie sundae. Similar to pop cake, a brownie sundae starts with a chocolate brownie that is then topped with vanilla ice cream. One difference, aside from the fact that the base of the dessert is a brownie on top of the cake, is that the ice cream is sometimes covered in chocolate syrup, sprinkles, whipped cream, and a cherry.
