Pineapple delight is a sweet, whipped dessert with three layers: crust, filling, and topping. The crust is made of graham crackers and butter, the filling of butter and powdered sugar, and the topping of crushed pineapple and whipped cream. The filling ingredients are simply mixed together and then spread over the cooled crust. If eggs are included, they are beaten into the mixture after the other ingredients have been combined.

The top layer always contains crushed and drained pineapple and whipped cream. If vanilla was not included in the filling mixture, it is included in the topping. Powdered sugar can also be added to this layer. Whipping cream, as well as vanilla and sugar, if included, are whipped together until stiff. Then, the pineapple is folded into stiffened cream.

The Pineapple Delight can be briefly baked after the filling layer is added, or the topping layer can be spread over the filling immediately after it is prepared. If the filling layer is cooked first, it should be allowed to cool completely before adding the topping. Once all layers are complete, graham cracker crumbles are sprinkled over the top and the dessert is placed in the refrigerator to chill overnight. When ready to serve, the pineapple delight is cut into squares.

There are even diabetic versions of this dessert. These versions use low-fat graham crackers, sugar-free lemon jelly, cottage cheese, and a sugar substitute. Also included are cornstarch, water and butter. Mashed pineapple should be sugar free. These versions are more pie-like, as they include just the graham cracker crust and blended filling.

Other than the light dessert, pineapple delight can refer to a type of smoothie made mostly with pineapple. Milk, honey and bananas may also be included. A type of alcoholic drink made from pineapple juice and coconut rum is also called pineapple delight.
