There are even diabetic versions of this dessert. These versions use low-fat graham crackers, sugar-free lemon jelly, cottage cheese, and a sugar substitute. Also included are cornstarch, water and butter. Mashed pineapple should be sugar free. These versions are more pie-like, as they include just the graham cracker crust and blended filling.
Other than the light dessert, pineapple delight can refer to a type of smoothie made mostly with pineapple. Milk, honey and bananas may also be included. A type of alcoholic drink made from pineapple juice and coconut rum is also called pineapple delight.
