What’s Pizzelle?

[ad_1]

Pizzella is a traditional Italian sugar cookie made with flour, sugar, butter, and eggs, often flavored with lemon or vanilla. It is cooked using a special pizzelle iron, which can be traditional or modern electric. Pizzelle is versatile and can be shaped into cones, cups, and baskets, and filled with chocolate, custard, or other sweet fillings. It is associated with Christmas and Easter and can be customized with family crests or symbols. Pizzelle irons can be expensive, but modern electric versions are affordable. Liqueurs like Sambuca or Amaretto can be added for an Italian twist.

A pizzella is a simple sugar cookie, originally from Italy and now popular throughout the West. A pizzella is made with sugar, flour, butter and eggs and very often flavored with traditional ingredients such as lemon or vanilla. Once the dough has been mixed, the biscuits are cooked using a special pizzelle iron. A pizzelle iron is similar to a waffle iron, with traditional and modern electric versions available.

The traditional pizzella in ferro is a double heavy cast iron skillet, made to be held over an open fire until the biscuit is cooked through. Modern electric pizza irons simply plug into a wall and press for a few seconds to cook the pizzella. Historically, a pizzella iron would be embossed with the family crest or some other symbol of personal significance; modern pizzelle irons use a handful of symbols, most often a snowflake, basket, or some sort of floral print.

When pizzelles were invented is uncertain, but they are known to be quite old. Originating somewhere in central Italy, they were initially made exclusively during large celebrations. They quickly became associated with both Christmas and Easter and would be stamped with symbols appropriate to these festivities.

Pizzellas have seen something of a renaissance over the past decade as their flexibility in cooking becomes better known. Because of their texture and thinness, pizzelle can be manipulated into a variety of shapes after they are cooked but before they cool completely. The most popular shape for a pizzella is a cone, often sprinkled with sugar and partially dipped in dark chocolate. Cups and baskets are also popular shapes, especially as they lend themselves to being filled with chocolate, custard, and other sweet fillings.

Traditional pizza irons can be hard to find, although some blacksmiths create custom irons with the symbol of your choice engraved on them. These old-fashioned pizza irons can cost anywhere from $50 to $300 depending on the craftsmanship and if they’re customized. This style of pizzelle iron is intended for use over an open fire. Modern electric pizza irons are very affordable, with good low-end pizza irons costing less than US$50. A great pizza iron can cost around $100, but the difference in quality is negligible.

One of the biggest appeals of pizzelle is its versatility as a dessert, so when baking, you don’t have to be afraid to experiment with new ingredients or toppings. In addition to the four basic ingredients, many people add liqueurs like Sambuca or Amaretto to the mix, giving their cookies a distinctly Italian but somewhat exotic spice.
