Ribe rice is a cultivar of Oryza sativa ssp japonica, with larger grains and a crystalline texture. It is often used for parboiling and is good for dishes like risotto and paella. It can be found in grocery stores, often labeled as Arborio rice.

Ribe rice is a rice cultivar developed by crossing different strains of rice from Italy and the United States. Depending on the cross, ribe rice can be short, medium or long grained, but some characteristics are retained in all lengths. One of the main uses of this rice is parboiling, which is done to make the rice easier to cook; many parboiled rice products are made with ribe rice, even if the label doesn’t state it.

This rice is a cultivar of Oryza sativa ssp japonica, a very popular rice subspecies that is grown all over the world. Ribe rice grains tend to be larger than other cultivars, and the rice also has a texture that is often described as crystalline. The structure of the rice makes it extremely absorbent. Some people consider ribe a more rustic rice cultivar, as it can cook to a rough or textured texture.

When rice is parboiled before cooking, it tends to hold its shape more and will remain chewy with a springy texture during the cooking process, rather than becoming mushy. This rice also tends to cook dry, meaning the individual grains won’t clump together or turn into a mush during the cooking process.

Many cooks like to use the short-grain variety of ribe rice for risotto; this rice is also called Arborio, referring to the Italian region where it is grown. Other traditional Mediterranean rice dishes, such as paella, can also be made with ribe rice. In dishes where the rice is roasted first in the pan, this rice may develop a slightly translucent appearance and will be infused with flavor from the other ingredients, due to its high absorbency.

Many grocers carry this rice in their rice section, although it won’t always be clearly identified as “ribe rice.” For cooks who want to experiment with this rice cultivar, Arborio rice can be a good place to start. Just like other rices, ribe rice needs to be rinsed thoroughly before cooking to reduce starch and remove field debris, and tends to cook to a better texture when soaked before cooking.
