To make pure korma, the vermicelli is first fried in butter. Then sugar is added. Sometimes a sugar syrup is created by reducing sugar water to a thick liquid and the syrup is included instead. Once the butter has dried, the milk is added and boiled gradually. At this stage, the pure korma must be stirred continuously.
After that, you can add raisins or dates, cardamom pods and walnuts. The dice can instead be saved to be used for garnishing. When used as a side dish, the nuts are first fried and then set aside. The rose water and cream are included towards the end of the cooking process when the vermicelli starts to get very soft. In addition to nuts, cardamom powder or saffron is often used to garnish this dish.
Alternatively, dates can be soaked in milk before use. Then, the milk is simmered with cardamom seeds and sugar until the liquid thickens. Next, the vermicelli is added and left to cook until soft. The dates are added just before cooking is complete and the rose water is added directly before the dish is removed from the heat.
Pure korma is a traditional dish for both Eid Al-Fitr and Eid Al-Adha, Muslim religious holidays. The dish is only served to family members for breakfast. During the day, however, the dish is available to all guests visiting the family home. Generally considered a breakfast food, it can also be a dessert and is sometimes called vermicelli pudding.
