To collect the wine, a long rubber hose is used to transfer the wine from one jug to the next, leaving behind the sediment that collects at the bottom of the first jug. The wine completes its fermentation when no more gas escapes through the fermentation block. This can sometimes take up to a year, by which time the wine can then be bottled, corked and stored.
